"Baby Pizzas"

I've been doing this regularly since K & O were about 18 months old. If you have little kids who love pizza, and you aren't doing this yet, start now!-- it is a winner!!! K & O, and now Meera too, love "Baby Pizzas." I make them in big batches (like, tonight, I made 3 dozen). You can do it however you like, of course, but I use whole-grain English Muffins, chunky veggie tomato sauce, and whole milk shredded mozzarella. I freeze them on sheet pans with wax paper beneath them (just like they are above); once they are frozen solid I then remove them from the sheet pans/wax paper and put bunches of them together into zip-loc bags and store in the freezer. Then they are ready to pull out at a moment's notice for quick dinners, lunches, or snacks. While they are heating up in the toaster oven we can quickly put together a little side dish. Tonight Owen tossed baby greens and croutons in the boys' favorite Caesar dressing.
Add a glass of milk, and voila! a really simple, relatively healthy supper that all three of the J-M bambinos LOVE. As always, I'd be thrilled for you to leave your comments -- what are you doing lately for quick and easy kid-tested and parent-approved meals?

My mom used to make these for us when we were little :) She would brush a bit of garlic and olive oil on the muffin first... so yummy! Must go make some!

Hmmmmmm. What am I doing for quick and easy kid-tested and parent-approved meals??? Let's see--on Mondays I check your blog or go to Trader Joe's; on Tuesdays I check your blog or go to Trader Joe's...

Seriously, you have some great healthy recipes for kids, and I am co-opting this one for my two nephews visit next week. (YIKES! Three boys under five!!!!) Usually, with only the Colin-ator at home, we can get away with prosciutto and cheese most of the time. Fortunately, he likes just about everything except mashed potatoes--go figure.

Here is an easy one. It's pretty quick too, though not of the frozen pizza order.

Tilapia with Mushrooms

1 pound sliced mushrooms (I used 1/2 this amount and it was plenty. Also, I just bought the presliced gourmet mix of mushrooms and they were great.)
3 tbsp olive oil
1/2 tsp salt (The original recipe calls for a whole teaspoon, but I think it's too salty when you do that. 1/2 is fine.)
1/2 tsp freshly ground pepper
1/4 tsp crushed red pepper flakes
1/2 tsp dried thyme
1 clove garlic minced
1 pound of Tilapia

Preheat oven to 400
Spread mushrooms on the bottom of a wide, shallow baking sheet.
Drizzle 2 tbsp olive oil over mushrooms
Sprinkle with 1/4 tsp salt, all of both peppers, thyme and garlic
Stir to distribute evenly
Bake for 10 minutes.
Remove pan and stir.
Push mushrooms away from center.
Place fish in the center. Dunk in the juices and turn over.
Drizzle fish with remaining olive oil (1 tbsp) and sprinkle with remaining salt (1/4 tsp)
Bake 15 minutes or until the fish is cooked through.

I served it with spinach and wild rice and it was really good! The recipe came from my sister. Enjoy!
